Ingredients1 kg tripe 4 tomatoes, chopped 2 garlic cloves, crushed 2 onions, chopped 1 teaspoonful of curry powder 1 cup of coconut milk 1 tablespoon of tomato paste 1 bunch of coriander Oil Salt |
DirectionsBoil the tripe for one hour and drain the stock. Fry the onions until almost brown, then add curry powder and stir. Add tomatoes and salt and cook until soft. Add tomato paste and stir. Add the coconut milk and bring to boil before adding the tripe. Mix well, cover, and simmer for 15 minutes. Serve hot. |
